Barbecue Chilli Maine Lobster

INGREDIENTS
- 6 live Maine lobsters
- 1 red chili pepper, finely chopped
- 3 tablespoons coriander, finely chopped
- 2 teaspoons Thai fish sauce
- 2 teaspoons sesame oil
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 lime for juice
- 2 teaspoons cumin

DIRECTIONS
1. ine Lobster: If you have live Maine lobsters place them in the refrigerator for 1 to 2 hours. To kill them stab them through the cross in the center of their heads (this will kill them instantly), then cut through the rest of the Maine lobster to cut them in half. Remove the internal track and grey sack in the head. Remove the claw from the body and crack the claw with the back of your knife.
3. Marinade: Mix all the marinade ingredients together in a bowl. Place the Maine lobsters on plates and pour over the marinade. Cover the Maine lobsters and place them in the refrigerator to marinate for 30 to 60 minutes before cooking.
